I get asked a lot about lower carb recipes that we cook frequently. I thought it would be a good idea to share some here! This Crockpot Mississippi Roast is something we make at least once a month, but I should probably just make it a permanent fixture in our menu rotation. I found the recipe one day on Pinterest at this blog and have been using it since. I’ve never been much of a roast fan because they also seemed so flavorless. This one is so full of flavor and a favorite all across our house.
What you need:
- 5-6 lb chuck roast
- 1 package of ranch seasoning
- 1 package of au jus seasoning
- 1 stick of butter
- 5 pepperoncini’s
Put the roast in the crockpot and then sprinkle the ranch and au jus over the roast. Put the stick of butter on top of the roast and add the pepperoncini’s. I just randomly spread them around. Cook on low for 7-8 hours. Shred with two forks.
I eat this alone with a side salad or veggies. If I’m not eating low carb that day I will eat it on a French roll with provolone cheese and then use the excess sauce in the pot for dipping. So delicious!
